In common bean, the most abundant proteins of the lectin family (arcelin, phytohaemagglutinin and α-amylase inhibitor -APA proteins) are major antinutritional factors of the seeds. Reduced protein digestibility and high toxicity at the intestinal level are the causes of their antinutritional effect.
