ABSTRACT Soybean [Glycine max (L.) Merr.] contains several health promoting compounds including phytosterols, isoflavones, phytic acid, and protease inhibitors. The two abundant protease inhibitors of soybean seeds are the Kunitz trypsin inhibitor and the Bowman‐Birk inhibitor (BBI).
