Nuoshanyao (NSY), Tiegunshanyao (TSY) and Huaishanyao (HSY) are the main cultivars of Chinese yam (Dioscorea opposita Thunb.) widely grown in China. The composition, physicochemical properties, morphology, and thermal properties of the starches from these cultivars were investigated in this study.
