Halophytes are increasingly recognized as sustainable crops that offer a wide range of nutrients. This study provides a nutritional characterization of annual (Salicornia europaea) and perennial (Sarcocornia fruticosa, Arthrocaulon macrostachyum) species of glasswort, collected from different coastal habitats in southern Italy.
