Cultured Siberian sturgeon (Acipenser baeri), Adriatic sturgeon (Acipenser naccarii) and white sturgeon (Acipenser transmontanus) of market size were examined for condition factor, eviscerated and dressed yields, white flesh yield, viscera-, hepato-somatic- and gonado-somatic indices.
