Levansucrase from Bacillus amyloliquefaciens and endo-inulinase from Aspergillus niger were used in a one-step reaction to produce short chain fructooligosaccharides (scFOSs) and oligolevans from sucrose. Levansucrase catalyzed the synthesis of levan, while endo-inulinase regulated the product molecular size.
