Aspergillus oryzae can metabolize xylan to d-xylose and d-xylose to xylitol. However, accumulation of xylitol is controlled by dehydrogenases, such as xylitol dehydrogenase (XDH) and l-arabitol-4-dehydrogenase (LAD), and fluxed into the pentose phosphate pathway.
