Forty-seven strains of bifidobacteria isolated from meat and meat products have been identified following phenotypic numerical analysis and DNA-DNA hybridization. Twenty-three strains were identified to the species B. thermophilum and 14 to B. pseudolongum subsp. pseudolongum.
