Minnesota (MN) and North Dakota (ND) together produce about 57% of U.S. sugar beets (Beta vulgaris L.) for sucrose extraction from its tap root. In October 2018, healthy sugar beet roots were harvested from two major production areas, Grand Forks, ND, and near Foxhome, MN, and kept in storage at 8°C and 80% relative humidity.
