Myrosinases (β-thioglucoside glucohydrolase, TGG; EC 3.2.1.147) catalyze the hydrolysis of glucosinolates, a structurally distinct group of nitrogen- and sulfur-containing secondary metabolites, to give a chemically unstable intermediate, glucose and sulfate.
